Often regarded as a better alternative toĀ refined sugar, coconut sugar is the dehydrated andĀ boiled sap of the coconut palm.Ā In comparison to whiteĀ sugar, coconut sugar is lower in fructose content, hasĀ a lower glycemic index & contains traces of someĀ minerals and antioxidants. It also contains a fibreĀ called inulin (a prebiotic fibre), which may slow glucoseĀ absorption and explain why coconut sugar is lower onĀ the index.
