Gluten-Free Pumpkin Spice Cupcakes with French Vanilla Cream Cheese Frosting

This easy, delicious, moist pumpkin spice cupcake will be your new fall favourite!

Simple and easy to make! Here is what you will need to bake these beauties!

You will need:

  • 2 large mixing bowls
  • whisk or hand mixer
  • spatula
  • cupcake pan or cake pan 8" or 9"
  • parchment paper or cupcake liners

Ingredients:

For Cake/Cupcakes

  • 4 large eggs
  • 1/2 cup oil 
  • 1/2 cup of canned pumpkin
  • 3 teaspoons pumpkin pie spice
  • 1 package of The Mindful Baking Company Golden Vanilla GF Cake Mix

For Cream Cheese Frosting

  • 3/4 cup cream cheese (not the light version, you want full fat here!)
  • 1/4 cup salted butter
  • Whipping cream or milk to help thin frosting (if needed)
  • 1 package of The Mindful Baking Company French Vanilla Frosting Mix

Makes 12 cupcakes or 1 cake 9 inch pan

Cake/Cupcakes

STEP 1: Preheat oven to 350 degrees F. Place contents of cake mix package into a large bowl.

STEP 2: In a separate bowl, whisk together eggs, oil, canned pumpkin and pumpkin spice. Feel free to add more spice if you like it spicy! Stir/mix wet ingredients into the flour mixture until throughly combined. Cover bowl with and let rest at room temperature for 5-10 minutes so the chia and flax seed in the mix have time to absorb the liquid. The batter will thicken naturally.

STEP 3: Line a cake or cupcake pan. Pour out batter evenly. Bake until a toothpick inserted in the center comes out clean or approximately 25 minutes for cake and 15 minutes for cupcakes.

STEP 4: Let cake cool in pan. While you wait...Make the frosting!

French Vanilla Cream Cheese Frosting

STEP 1: Add room temperature cream cheese and butter into large bowl. Using hand mixer, whip together until light and fluffy.

STEP 2: Add contents of French Vanilla Frosting mix to cream cheese/butter mixture and mix until thoroughly combined.

STEP 3: Add whipping cream or milk to frosting if still too thick. Start with 1 tsp and add additional teaspoons only if needed.

*** TIP: Don't let the frosting fool you! We always keep our frosting on the thicker side so that it pipes out nicely. Unless of course you like thinner frosting! That's totally great too! 

STEP 4: Decorate your cake or cupcakes and ENJOY!!
