Often regarded as a better alternative to refined sugar, coconut sugar is the dehydrated and boiled sap of the coconut palm. In comparison to white sugar, coconut sugar is lower in fructose content, has a lower glycemic index & contains traces of some minerals and antioxidants. It also contains a fibre called inulin (a prebiotic fibre), which may slow glucose absorption and explain why coconut sugar is lower on the index.
